Research Center Working On Rice-Based French Fries

The Agricultural Research Services’ South Regional Research Center, New Orleans, LA, is working on a new kind of French fry made from rice flour mixtures. The fries are low fat and healthier than traditional potato versions; in tests the fries absorbed 25-50% less fat from oil during cooking. The USDA has filed for a patent on the process.
